Elijah Craig 12 yr old Kentucky Straight Bourbon

Elijah Craig 12 year old is a quality, "classic," small-batch style Bourbon from Heaven Hill Distilleries. At first nosing it may seem simple and straight-forward, but you don't want to rush into this one.  Add a splash of water and let it sit covered for a few minutes before tucking in and you'll be rewarded with a fine, economical, sippin' Bourbon.
Nose: Fresh with sweet aromas of honey, caramel, rich creamy vanilla and pecan pie. There's a touch of mint hidden amidst the rye spiciness.

Palate: Smooth on entry yet at the same time quite aromatic and floral. An edge of rye spice runs throughout the palate yet it's held in balance by sweet flavours of caramel, honey, and vanilla. Just before the finish, ginger and a hint of smoke appear. 

Finish: Elegant and aromatic, the long finish works its way through caramel, amaretto, and a salty molasses-like sweetness before settling into a gentle wave of lingering spice.

Overall: As mentioned at the outset, this Bourbon is a true sippin' whiskey which continues to evolve and deepen in flavour over the course of the glass. I didn't find it to be very food friendly as the aromas and flavours are somewhat delicate and too nuanced to stand up to foods with strong, sweet, or bold flavours of their own. Perhaps I just haven't found the right combination yet...In my experience, Elijah Craig 12yr is best enjoyed in a contemplative setting after dinner while reading a good book or while sitting on the back porch with a fellow enthusiast as you take in the evening air and the wonderful aromas emanating from your whiskey glass.
